Homemade Protein-Rich Meatless Balls

Ingredients

  • 1 can black beans
  • 3 Tbsp flaxseed
  • 1 cup cooked quinoa
  • 1/4 cup nutritional yeast
  • 3 garlic cloves
  • 1 small onion
  • 1 tsp oregano
  • 1/2 tsp fennel seeds
  • salt and pepper to taste
  • 1 tbsp coconut aminos
  • 1/2 tsp chilli flakes
  • 2 Tbsp water
  • 3 tbsp fresh basil
  • 1 Tbsp oil (coconut or olive)

Preparation

  1. Cook the quinoa in vegetable stock, then leave to one side when cooked.

  2. Set the oven to 180C and spread out the beans on a lined baking tray and cook for 15 minutes, then remove from oven.

  3. Fry the onion and garlic for 5 minutes on low heat with some olive oil or water.

  4. Add the garlic, onion, and black beans to a blender and blitz until loose.

  5. Add in the remaining ingredients and blitz until dough forms.

  6. Make the balls by scooping 1.5 tablespoons of the mixture and rolling in your hands, continue until all mixture is used (approximately 15 balls).

  7. In a large frying pan, heat oil of choice on medium heat, add the meatless balls, turn to brown all sides, then place in the oven for 20 minutes.

  8. Serve with your favorite tomato sauce.

Variations

  1. Cook these for a falafel option.

  2. Alternatively, shape the mixture into patties for burgers and fry or bake in the oven.
