Tandoori Pulled Jackfruit Vegan Burger
Ingredients
- 1/2tspn rapeseed oil @mr_organic
- 1tspn chopped garlic
- 1 jar jackfruit chunks @clearspringuk
- 1tbsp tandoori masala @eastendfoodsuk
- 1/2 lime juice
- ▫️1/2 red onion chopped
- ▫️1/2 red pepper chopped
- ▫️1/2 avocado per burger
- chopped coriander for garnish (never too much but if you prefer, parsley is also delicious)▫️salt is optional but personally I don’t think you need any
Preparation
As seen in the video but here are a few tips
I fried the garlic for 1min then added the jackfruit
I cooked the jackfruit for about 5-6 mins then mashed it with a potato masher to give it the pulled effect
I added the tandoori powder and cooked for a further 2mins on high heat
As part of my weekend food prep I keep chopped veggies in my fridge for easy cooking throughout the week: courgettes, peppers, red onions, coriander - I will make a post in this
My garlic is always pre chopped in the fridge
Enjoy the burger hot or cold - great for the lunch box
Next time I make these I will make an avocado mash to make the burgers more moist
I made 2 burgers for lunch and the remaining jackfruit I put in a taco ? the next day for lunch
