Tandoori Pulled Jackfruit Vegan Burger

Ingredients

  • 1/2tspn rapeseed oil @mr_organic
  • 1tspn chopped garlic
  • 1 jar jackfruit chunks @clearspringuk
  • 1tbsp tandoori masala @eastendfoodsuk
  • 1/2 lime juice
  • ▫️1/2 red onion chopped
  • ▫️1/2 red pepper chopped
  • ▫️1/2 avocado per burger
  • chopped coriander for garnish (never too much but if you prefer, parsley is also delicious)▫️salt is optional but personally I don’t think you need any

Preparation

  1. As seen in the video but here are a few tips

  2. I fried the garlic for 1min then added the jackfruit

  3. I cooked the jackfruit for about 5-6 mins then mashed it with a potato masher to give it the pulled effect

  4. I added the tandoori powder and cooked for a further 2mins on high heat

  5. As part of my weekend food prep I keep chopped veggies in my fridge for easy cooking throughout the week: courgettes, peppers, red onions, coriander - I will make a post in this

  6. My garlic is always pre chopped in the fridge

  7. Enjoy the burger hot or cold - great for the lunch box

  8. Next time I make these I will make an avocado mash to make the burgers more moist

  9. I made 2 burgers for lunch and the remaining jackfruit I put in a taco ? the next day for lunch
