Tandoori Pulled Jackfruit Vegan Burger
Ingredients
- 1/2 teaspoon rapeseed oil
- 1 teaspoon chopped garlic
- 1 jar jackfruit chunks
- 1 tablespoon tandoori masala
- Juice of 1/2 lime
- 1/2 red onion, chopped
- 1/2 red pepper, chopped
- 1/2 avocado per burger
- Chopped coriander for garnish
- Salt, optional
Preparation
Heat the rapeseed oil in a pan
Fry the chopped garlic for 1 minute
Add the jackfruit chunks and cook for 5-6 minutes
Mash the jackfruit with a potato masher
Add the chopped red onion and chopped red pepper
Add the tandoori masala and cook for a further 2 minutes on high heat
Stir in the lime juice
Assembly
Place the pulled jackfruit mixture on a burger bun and top with sliced avocado and chopped coriander
