Tandoori Pulled Jackfruit Vegan Burger

Ingredients

  • 1/2 teaspoon rapeseed oil
  • 1 teaspoon chopped garlic
  • 1 jar jackfruit chunks
  • 1 tablespoon tandoori masala
  • Juice of 1/2 lime
  • 1/2 red onion, chopped
  • 1/2 red pepper, chopped
  • 1/2 avocado per burger
  • Chopped coriander for garnish
  • Salt, optional

Preparation

  1. Heat the rapeseed oil in a pan

  2. Fry the chopped garlic for 1 minute

  3. Add the jackfruit chunks and cook for 5-6 minutes

  4. Mash the jackfruit with a potato masher

  5. Add the chopped red onion and chopped red pepper

  6. Add the tandoori masala and cook for a further 2 minutes on high heat

  7. Stir in the lime juice

Assembly

  1. Place the pulled jackfruit mixture on a burger bun and top with sliced avocado and chopped coriander
