Tofu Pinto Bean Fajita Mini Burgers

Ingredients

  • 11/2 cups pinto beans
  • 2 cups fresh spinach
  • 1/2 block extra firm tofu
  • 1 jalapeno pepper (optional)
  • 1/4 cup nutritional yeast
  • 1/8 cup cilantro leaves
  • 2 cloves garlic
  • 1 tbsp lemon juice
  • 1-11/2 cups breadcrumbs
  • 1/2 tsp each cumin, smoked paprika, garlic powder and cinnamon
  • s&p to taste
  • oil for cooking

Preparation

  1. In a food processor combine together all the ingredients aside from the breadcrumbs and blitz till completely smooth

  2. Transfer to a large mixing bowl and start by adding 1 cup breadcrumbs and mixing

  3. Keep adding breadcrumbs 1 tbsp at a time until dough is no longer loose and sticky

  4. Shape into patties and refrigerate for at least 30 minutes

  5. Fry patties in shallow oil, about 11/2 mins per side and enjoy!
