Afelia's Delightful Sponge Cake
Ingredients
- 100g butter
- 125g sugar
- 2 medium eggs
- 100g self raising flour
- 100g Greek Yoghurt OR 1/2 a cup
- 1 tsp vanilla essence
- generous handful of sliced almonds
Preparation
Lightly toast your sliced almonds in a frying pan till light golden brown
In a bowl cream together 100g butter and 125g sugar
Add eggs to the bowl one at a time and mix
Gradually add 100g of self raising flour
Finally add 100g of Greek Yoghurt (which is equivalent to 1/2 cup)
And 1 tsp of vanilla essence
Pour cake batter into a 6
Bake for approx 1 hour on gas mark 4 or till a toothpick comes out clean
Enjoy with a hot cuppa
