Afelia's Delightful Sponge Cake


  • 100g butter
  • 125g sugar
  • 2 medium eggs
  • 100g self raising flour
  • 100g Greek Yoghurt OR 1/2 a cup
  • 1 tsp vanilla essence
  • generous handful of sliced almonds


  1. Lightly toast your sliced almonds in a frying pan till light golden brown

  2. In a bowl cream together 100g butter and 125g sugar

  3. Add eggs to the bowl one at a time and mix

  4. Gradually add 100g of self raising flour

  5. Finally add 100g of Greek Yoghurt (which is equivalent to 1/2 cup)

  6. And 1 tsp of vanilla essence

  7. Pour cake batter into a 6

  8. Bake for approx 1 hour on gas mark 4 or till a toothpick comes out clean

  9. Enjoy with a hot cuppa
