Fig Walnut Zucchini Cake

Ingredients

  • 1/2 cup brown sugar
  • 3 Tbsp date syrup
  • 6 Tbsp rapeseed oil
  • 1 tsp vanilla
  • 2 cups roughly ground walnuts
  • 1/2 cup rice flour
  • 1 1/2 tsp baking powder
  • 1 1/2 cups shredded and well squeezed marrow or zucchini
  • 1 1/2 cups chopped fresh figs

Egg replacement

  • 1 tsp baking soda
  • 1 Tbsp apple cider vinegar
  • 2 tsp arrow root powder
  • 4 Tbsp water

Preparation

  1. Whisk the egg replacement and set aside.

  2. Mix together the sugar and date syrup.

  3. Add the oil and mix until combined.

  4. Mix in the egg replacement until well combined.

  5. Add the vanilla, flour and nuts, baking powder, salt and again, combine really well.

  6. Add in the zucchini and gently combine and finally the figs.

  7. Bake in the oven preheated to 180 C for about 50 minutes, until the edges are separating from the cake pan.
