Grapefruit Greek Yogurt Cake
Ingredients
- 1 1/2 cups King Arthur Flour GF measure for measure flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 3 eggs
- 3/4 cup Chobani Greek yogurt
- 1 cup brown sugar
- 1/2 cup canola or coconut oil
- 1/4 cup grapefruit juice
- zest of one grapefruit
- 2 tsp vanilla
Glaze
- 1 cup confectioners sugar
- 1 tbsp grapefruit juice
- 1/2 tsp McCormick vanilla
Preparation
Preheat oven to 350.
Combine flour, salt, baking soda and set aside.
Whisk eggs, add in sugar, oil, vanilla, yogurt, grapefruit zest and juice.
Combine wet and dry ingredients until just mixed.
Pour into 9x5 loaf pan.
Bake for 45-55 minutes or until cake tester comes out clean.
To make glaze combine ingredients and pour over when cooled.
Cut and serve.
Store for five days or toast or freeze to keep for longer.
