No Bake Apricot Cheesecake
Ingredients
Base
- 6 vegan butter biscuits
- 25g melted margarine
Filling
- 150g vegan cream cheese
- 300g Vanilla Skyr or more cream cheese
- 1 scoop of Peach Flavor Powder (optional)
- ground erythritol to taste
- 15g agar agar
- 100ml water
Topping
- 1 can of drained apricots
Preparation
Crumble the biscuits and combine with margarine, press into a parchment paper lined 17cm baking pan and refrigerate.
Mix all the filling ingredients except for the agar agar preparation.
Bring the agar agar to a boil with 100ml water according to package instructions.
Gradually stir approximately 4 tablespoons of the cream mixture into the agar, then mix well with the remaining cream and spread over the biscuit base.
Spread the drained apricots over the cake and chill for at least 3 hours.
Decorate with chocolate if desired.
