Vegan No-Bake Chocolate Cherry Tartlets
Ingredients
Chocolate crust
- 1 cup oats
- 2 tbsp cocoa powder
- 1/2 cup hazelnut, ground
- 2 tbsp coconut oil, melted
- 8 dates, pitted and chopped
- 2 tbsp agave
Cherry filling
- 250g fresh cherries, pitted and halved
- 1/4 cup soy milk
- 1 tsp agave
- 1 tsp lemon juice
- 1/2 tsp corn starch
- 1/4 tsp agar agar
Preparation
Place all the crust ingredients in a food processor and process until a sticky dough forms.
Press the dough into the tart tins.
Place the tins into the refrigerator while making the filling.
Place all the filling ingredients except the corn starch and agar agar in a food processor and blend until well combined.
Pass the mixture through a sieve and pour into a saucepan.
Add the corn starch and agar agar and bring to a brief boil, stirring continuously.
Pour into a bowl and let cool until lukewarm, stirring from time to time.
Spread the filling on the crust and place into the refrigerator for at least 4 hours.
Garnish with cherries
