Oatmeal Pancakes and Red Berry Syrup
Ingredients
- for pancakes
- 3 cups of oats
- 1 1/2 cups of non dairy milk
- 1 banana
- 1/4 cup of coconut oil
- 1/4 cup of maple syrup
- extra coconut oil for cooking
- for syrup
- 1/2 cup of frozen raspberries
- 1/2 a cup frozen strawberries
- 1 tbs of maple syrup
Preparation
In a small pot on medium heat, heat up non dairy milk and cook oats for about 3 minutes
Add to blender and add banana, coconut oil, and maple syrup and blend well
In a medium pan on medium heat, add a little coconut oil and pour a scoop of batter into pan
Cook until golden on each side
Repeat process until all batter is used
In a small pot on medium-high heat add all ingredients for syrup and stir for a few minutes
Pour syrup onto pancakes
