Simple Buttercream Cake
Ingredients
For cake
- 100g butter
- 100g sugar
- 2 medium eggs
- 100g self raising flour
- 1 tsp baking powder
- 1 tsp vanilla flavouring
For plain vanilla buttercream
- 100g butter
- 200g icing sugar
- 1 tsp vanilla
- 2 - 3 tbsp milk
For chocolate buttercream
- 100g butter
- 200g icing sugar
- 1 tsp vanilla
- 2 - 3 tbsp milk
- 100g milk chocolate
Preparation
Preheat oven to 180°C. Grease and flour an 8" baking tin.
Cream together butter and sugar until pale and fluffy. Add in eggs one by one until combined. Sift in self raising flour + baking powder and mix until smooth.
Pour batter into tin and bake for 20 - 25 mins, until a skewer comes out clean when inserted into the middle of the cake. Allow cake to cool for 5 mins before removing from tin.
To make plain vanilla buttercream; cream butter until pale and light in colour. Slowly sift in icing sugar and add vanilla flavouring until combined. Add 2 - 3 tbsp milk to make icing easier to pipe.
To make chocolate buttercream, follow previous steps, then melt 100g milk chocolate and add it to the buttercream, mix until combined.
Use a spatula or piping bag and ice the top of the cake as desired.
