Simple Buttercream Cake

Ingredients

For cake

  • 100g butter
  • 100g sugar
  • 2 medium eggs
  • 100g self raising flour
  • 1 tsp baking powder
  • 1 tsp vanilla flavouring

For plain vanilla buttercream

  • 100g butter
  • 200g icing sugar
  • 1 tsp vanilla
  • 2 - 3 tbsp milk

For chocolate buttercream

  • 100g butter
  • 200g icing sugar
  • 1 tsp vanilla
  • 2 - 3 tbsp milk
  • 100g milk chocolate

Preparation

  1. Preheat oven to 180°C. Grease and flour an 8" baking tin.

  2. Cream together butter and sugar until pale and fluffy. Add in eggs one by one until combined. Sift in self raising flour + baking powder and mix until smooth.

  3. Pour batter into tin and bake for 20 - 25 mins, until a skewer comes out clean when inserted into the middle of the cake. Allow cake to cool for 5 mins before removing from tin.

  4. To make plain vanilla buttercream; cream butter until pale and light in colour. Slowly sift in icing sugar and add vanilla flavouring until combined. Add 2 - 3 tbsp milk to make icing easier to pipe.

  5. To make chocolate buttercream, follow previous steps, then melt 100g milk chocolate and add it to the buttercream, mix until combined.

  6. Use a spatula or piping bag and ice the top of the cake as desired.
