Vegan Chocolate Chip Muffins

Ingredients

Dry

  • 2 cups of Organic flour
  • 1 cup of Organic Cane Sugar
  • 1 tsp of Baking Powder
  • 1 tsp of Baking Soda
  • Pinch of salt
  • Dash of Cinnamon
  • 1 cup of Vegan Chocolate Chips

Wet

  • 1 cup of unsweetened Cashew Milk
  • Flax seed egg
  • 1/3 cup of organic Canola Oil
  • 2 tsp of Organic Vanilla
  • 2 tsp of Organic Apple Cider Vinegar

Preparation

  1. Preheat oven to 180°C

  2. In a large bowl, mix all dry ingredients together until well combined

  3. In a separate bowl, whisk all wet ingredients together until smooth

  4. Pour the wet mixture into the dry mixture and stir gently until just combined, being careful not to overmix

  5. Spoon the batter into lined or greased muffin tins, filling each about two-thirds full

  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean

  7. Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely
