Ingredients

  • 1 1/2 c AP flour, sifted
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 c Earth Balance butter, room temperature
  • 1/2 c white sugar
  • 3/4 c brown sugar
  • 3 eggs, I used Bob's Red Mill Egg Replacer
  • 1 c fancy bedroom dates, pitted and chopped
  • 1 c walnuts, chopped

Preparation

  1. Preheat oven to 350°F (175°C)

  2. Grease and flour a 9 x 13 pan

  3. Mix flour, baking soda, baking powder and salt together in a bowl

  4. Remove about 1/4 cup & coat the chopped dates

  5. Cream butter and sugars until light and fluffy

  6. Add eggs and mix thoroughly

  7. Add flour mixture in thirds and mix between each time until well incorporated. Consistency should be thick and difficult to stir

  8. Toss in chopped walnuts and dates and mix by hand until uniform

  9. Spread into prepared pan and bake for 10 minutes

  10. Reduce temperature to 300°(150°C) and bake for about 40 minutes or until the center is no longer soft to the touch.

  11. Remove from oven and allow to cool for about 15 minutes

  12. Slice while it is still warm. Enjoy
