Fruit Gummies

Ingredients

  • 1 c of fresh fruit juice of choice (strained)
  • 1/4 c coconut water (to help sweeten)
  • 1/4 c lemon juice
  • 1-2 tbs maple syrup or agave (probably better)
  • 1-2 tsp of agar agar

Preparation

  1. Blend fresh fruit until smooth. Strain with a nut milk bag. In a separate bowl, mix coconut water + 1-2 tsp of agar agar depending on how thick your juice is after straining until dissolved

  2. On med-low heat, heat juice with maple syrup for a few minutes until slightly boiling. Turn down heat to low. Pour in agar agar mixture and let it simmer until it’s a thickened consistency (check by how slow or fast it pours off your spoon), usually about 5 minutes. Whisk throughout

  3. Pour into your silicone mold and let it sit at room temp for ~5 min before placing in the fridge to set for ~10 min. If your mixture isn’t setting quickly, you might need to pour back into the pot and add more agar agar
