Fudgy Avocado Chocolate Loaf

Ingredients

  • 1 avocado⁠
  • 150g / 5,3 oz self rising flour⁠
  • 150g /5,3 oz brown sugar ⁠
  • 1 tsp baking powder⁠
  • 200g / 7oz melted dark chocolate⁠
  • 60 ml / 2 fl.oz coffee⁠
  • A big splash of Vegan buttermilk (recipe at @sovegan)⁠.⁠
  • For the topping:⁠
  • 150g /5,3 oz dark chocolate⁠
  • 100ml /3,4 fl.oz plant-based milk⁠

Preparation

  1. Blend all ingredients until smooth. Transfered to a lined baking tray, bake at 180C/356F for 50 min

  2. For the frosting, melt the chocolate together with the plant-milk, add it on top of the cake and leave to set

  3. For decoration, add chopped pieces of dark chocolate. Serve with strawberries and coconut whipped cream
