Fudgy Avocado Chocolate Loaf
Ingredients
Cake
- 1 avocado
- 150g / 5.3 oz self rising flour
- 150g / 5.3 oz brown sugar
- 1 tsp baking powder
- 200g / 7 oz melted dark chocolate
- 60 ml / 2 fl.oz coffee
- A big splash of Vegan buttermilk (recipe at @sovegan)
Topping
- 150g / 5.3 oz dark chocolate
- 100ml / 3.4 fl.oz plant-based milk
Preparation
Preheat oven to 180°C
Blend all ingredients until smooth.
Transfer to a lined baking tray and bake at 180°C/356°F for 50 minutes.
Melt the chocolate together with the plant-based milk for the frosting.
Add the frosting on top of the cake and leave to set.
Add chopped pieces of dark chocolate for decoration.
Serve with strawberries and coconut whipped cream.
