Homemade Vegan Fruit Gummies with Agar Agar

Ingredients

  • 1 C of fresh fruit juice of choice (strained)
  • 1/4 C coconut water (to help sweeten)
  • 1/4 C lemon juice
  • 1-2 tbs maple syrup or agave
  • 1-2 tsp of agar agar

Preparation

  1. Blend fresh fruit until smooth and strain with a nut milk bag.

  2. In a separate bowl, mix coconut water with 1-2 teaspoons of agar agar until dissolved, depending on the thickness of the juice after straining.

  3. On medium-low heat, heat the juice with maple syrup for a few minutes until slightly boiling.

  4. Reduce heat to low, pour in the agar agar mixture, and let it simmer until thickened (check consistency by how it pours off a spoon), usually about 5 minutes, whisking throughout.

  5. Pour into a silicone mold and let it sit at room temperature for about 5 minutes before placing in the fridge to set for about 10 minutes. If the mixture isn’t setting quickly, pour it back into the pot and add more agar agar.
