Homemade Vegan Gluten-Free Twix Squares

Ingredients

Base

  • 1 cup fine oat flour
  • 3 tablespoons coconut flour
  • 2 soaked, soft dates
  • 1 tablespoon applesauce
  • 3 tablespoons coconut oil

Date caramel

  • 1 1/4 cups Medjool dates, very well soaked
  • 4 tablespoons peanut butter
  • 1-2 tablespoons mylk or water
  • tsp vanilla essence

Topping

  • 2 slabs dark chocolate
  • tablespoon coconut oil

Preparation

  1. Mix all base ingredients in a food processor and pat down firmly in a pan with parchment paper. Cook at 180 degrees Celsius for 15 minutes or until edges are lightly browned.

  2. Blitz all date caramel ingredients in a food processor until smooth. Spread on cooled base and freeze for 2 hours.

  3. Microwave dark chocolate and coconut oil in 30-second increments, stirring in between, until melted. Spread on top and set in the fridge for another hour.
