Homemade Vegan Gluten-Free Twix Squares
Ingredients
Base
- 1 cup fine oat flour
- 3 tablespoons coconut flour
- 2 soaked, soft dates
- 1 tablespoon applesauce
- 3 tablespoons coconut oil
Date caramel
- 1 1/4 cups Medjool dates, very well soaked
- 4 tablespoons peanut butter
- 1-2 tablespoons mylk or water
- tsp vanilla essence
Topping
- 2 slabs dark chocolate
- tablespoon coconut oil
Preparation
Mix all base ingredients in a food processor and pat down firmly in a pan with parchment paper. Cook at 180 degrees Celsius for 15 minutes or until edges are lightly browned.
Blitz all date caramel ingredients in a food processor until smooth. Spread on cooled base and freeze for 2 hours.
Microwave dark chocolate and coconut oil in 30-second increments, stirring in between, until melted. Spread on top and set in the fridge for another hour.
