Raw Vegan Chocolate Truffles

Ingredients

  • 2 cups raw walnuts
  • 8 pitted medjool dates
  • 1/4 cup cacao powder

Preparation

  1. Add the walnuts to a food processor, and pulse until they're blended into very small pieces

  2. Add the dates and cacao powder, and blend until everything is totally mixed into a thick dough

  3. Use a tablespoon to measure out 1 truffle, roll it into a ball, repeating until all the dough is gone – you'll end up with about 18 truffles

  4. Set on a plate and into the fridge for about 1 hour to set up

  5. Store the truffles in the refrigerator

  6. If you want them more firm, feel free to keep them in the freezer and set them out for a few minutes to thaw before eating
