Quick Pickled Onions with Dill and Spices

Ingredients

  • 1 lb red onions, sliced
  • 2 c key lime juice OR sour orange juice OR Ume Plum Brine OR a mixture of all three
  • 1 tbs dill seed
  • 1 tbs coriander
  • 1 tsp ginger
  • 1 tsp onion powder
  • 1 tsp carraway seeds
  • 3 whole cloves
  • 1 Tb sea salt

Preparation

  1. Combine all ingredients.

  2. Allow them to infuse for an hour in the fridge or at room temperature.

  3. Enjoy on tacos, salads, or falafel.

  4. Store in the fridge; it keeps for a few days.

  5. Note: Coriander may not be suitable if following a strict Dr. Sebi diet.
