Curry Fried Rice
Ingredients
- ~ 3 cups cooked Jasmine rice
- ~ 1 cup chopped asparagus
- ~ 1/2 cup chopped fried/pan-fried tofu
- ~ 1/4 cup chopped carrots
- ~ 2 finely sliced shallots
- ~ 2 tablespoons *soy sauce
- ~ 1-2 teaspoons curry powder
- ~ 1-2 teaspoons sambal/chili paste (optional)
- ~ oil & salt to taste
Preparation
In a heated non-stick pan with 3 teaspoons oil, sauté shallots until they turn translucent.
Then, add tofu, carrots, asparagus, curry powder, sambal (if using) & cook for 1-2 minutes.
Add in rice & give it a quick toss, then season with soy sauce & salt. ✅Cook for a few minutes by stirring continuously so each grain is coated with curry powder. ?Serve warm with a squeeze of lime juice & garnish with chopped scallions
Replace soy sauce with coconut amino or tamari for a gluten-free version.
