Roasted Mediterranean Vegetable Gnocchi Traybake

Ingredients

  • Mediterranean vegetables
  • olive oil
  • rosemary
  • gnocchi
  • shredded mozzarella
  • rose harissa

Preparation

  1. Preheat the oven.

  2. Chop the Mediterranean vegetables and toss them in olive oil and rosemary.

  3. Roast for 20-30 minutes.

  4. Boil the gnocchi for 2 minutes.

  5. Drain the gnocchi and add it to the vegetable tray along with shredded mozzarella.

  6. Return to the oven for 5 minutes.

  7. Serve with scattered rose harissa.
