Roasted Mediterranean Vegetable Gnocchi Traybake
Ingredients
- Mediterranean vegetables
- olive oil
- rosemary
- gnocchi
- shredded mozzarella
- rose harissa
Preparation
Preheat the oven.
Chop the Mediterranean vegetables and toss them in olive oil and rosemary.
Roast for 20-30 minutes.
Boil the gnocchi for 2 minutes.
Drain the gnocchi and add it to the vegetable tray along with shredded mozzarella.
Return to the oven for 5 minutes.
Serve with scattered rose harissa.
