Rustic Sausage Casserole
Ingredients
- pack of 6 pork sausages
- 1 tbsp olive oil
- 1 medium red onion finely chopped
- 2 plump cloves garlic crushed
- 2 bay leaves
- 2 tsp smoked paprika
- pinch of chilli flakes
- 1 heaped tsp dried oregano
- 1/2 tsp finely chopped fresh rosemary
- 1 sprig of rosemary (to lay on top)
- 100ml white wine
- 1 tin chopped tomatoes
- 200ml chicken stock
- 2tsp honey
- salt and pepper to taste
Preparation
Preheat oven to 180 degrees celsius
Use a large non stick skillet/frying pan, heat it to a medium high heat (hob mark 4), add the olive oil and seal the sausages, turning regularly until they are golden brown in most places
Remove the sausages and set aside
Add the chopped onion to the pan and sauté until for 4-5 mins and then add the bay leaves and garlic and continue to sauté for 2 minutes
Add the oregano, chopped rosemary, paprika and chili flakes to the pan and sauté for another 2 minutes
Deglaze the pan with the wine and cook down until the liquid has almost cooked off
Add the stock and the tinned tomatoes and bring back up to a simmer for around 15 minutes, stirring occasionally
Taste and season the sauce, bearing in mind it will continue to reduce in the oven
Decant the sauce into an ovenproof casserole dish, add the sausages and pop the sprig of rosemary on top
Put the dish into the preheated oven and leave to cook for 35 minutes
Remove from the oven and let the dish rest for a few minutes before serving
Serve with buttery mash and your favourite veg ❤️
