Simple and Super Yummy Potato Gratin
Ingredients
- 700 g potatoes
- 1 yellow onion
- 2 garlic cloves
- 1 can (400 ml) coconut milk
- 1 tsp paprika powder
- 1 tsp salt
- 0.5 tsp black pepper
- 0.25 tsp grated nutmeg
- 1 tbsp nutritional yeast
- 1 teaspoon white miso
Preparation
Set the oven to 200°C/390°F.
Pour the coconut milk into a bowl and add paprika powder, salt, black pepper, nutmeg, nutritional yeast and miso. Whisk and set aside.
Peel and slice the potatoes very thinly, about 3 mm thick. Using a food processor can make this quicker.
Peel and slice the onion and garlic thinly.
Mix the potatoes, onions and garlic in a baking tray.
Stir the coconut milk mixture again and pour it over the potatoes.
Bake for 45 minutes until the potatoes are soft and the gratin is golden brown.
