Simple and Super Yummy Potato Gratin
Ingredients
- 700 g potatoes⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 yellow onion⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 2 garlic cloves⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 tsp paprika powder⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 tsp salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 0.5 tsp black pepper⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 0.25 tsp grated nutmeg⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 tbsp nutritional yeast⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 teaspoon white miso⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preparation
Set oven to 200C/390F.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Pour the coconut milk into a bowl and add paprika powder, salt, black pepper, nutmeg, nutritional yeast and miso. Whisk and set aside.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Peel and slice the potatoes very thinly (3 mm), with a food processor it goes extra quickly.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Peel and slice the onion and garlic thinly.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Mix potatoes, onions and garlic in a baking tray.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Give the coconut milk mixture another stir and pour over the potatoes.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Bake for 45 mins until the potatoes are soft and the gratin is beautifully golden brown.⠀⠀⠀⠀⠀⠀⠀⠀
