Simple and Super Yummy Potato Gratin

Ingredients

  • 700 g potatoes⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1 yellow onion⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 2 garlic cloves⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1 tsp paprika powder⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1 tsp salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 0.5 tsp black pepper⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 0.25 tsp grated nutmeg⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1 tbsp nutritional yeast⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1 teaspoon white miso⠀⠀⠀⠀⠀⠀⠀⠀⠀

Preparation

  1. Set oven to 200C/390F.⠀⠀⠀⠀⠀⠀⠀⠀⠀

  2. Pour the coconut milk into a bowl and add paprika powder, salt, black pepper, nutmeg, nutritional yeast and miso. Whisk and set aside.⠀⠀⠀⠀⠀⠀⠀⠀⠀

  3. Peel and slice the potatoes very thinly (3 mm), with a food processor it goes extra quickly.⠀⠀⠀⠀⠀⠀⠀⠀⠀

  4. Peel and slice the onion and garlic thinly.⠀⠀⠀⠀⠀⠀⠀⠀⠀

  5. Mix potatoes, onions and garlic in a baking tray.⠀⠀⠀⠀⠀⠀⠀⠀⠀

  6. Give the coconut milk mixture another stir and pour over the potatoes.⠀⠀⠀⠀⠀⠀⠀⠀⠀

  7. Bake for 45 mins until the potatoes are soft and the gratin is beautifully golden brown.⠀⠀⠀⠀⠀⠀⠀⠀
