Simple and Super Yummy Potato Gratin

Ingredients

  • 700 g potatoes
  • 1 yellow onion
  • 2 garlic cloves
  • 1 can (400 ml) coconut milk
  • 1 tsp paprika powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp grated nutmeg
  • 1 tbsp nutritional yeast
  • 1 teaspoon white miso

Preparation

  1. Set the oven to 200°C/390°F.

  2. Pour the coconut milk into a bowl and add paprika powder, salt, black pepper, nutmeg, nutritional yeast and miso. Whisk and set aside.

  3. Peel and slice the potatoes very thinly, about 3 mm thick. Using a food processor can make this quicker.

  4. Peel and slice the onion and garlic thinly.

  5. Mix the potatoes, onions and garlic in a baking tray.

  6. Stir the coconut milk mixture again and pour it over the potatoes.

  7. Bake for 45 minutes until the potatoes are soft and the gratin is golden brown.
