Vegan Potato Bake with Creamy Sauce
Ingredients
- 1/2 onion
- 1 clove garlic
- 2 tablespoons vegan butter
- 1.5 cups plant-based milk
- 1 cup vegetable broth
- 2 tablespoons flour
- 700g potatoes
- Salt and pepper
- Thyme
Preparation
Preheat the oven to 200°C/400°F.
Finely wash and thinly slice the potatoes, and chop the onion and garlic.
Mix the vegetable broth and plant-based milk together.
Add 1 tablespoon vegan butter to a saucepan and sauté the onion and garlic over medium heat, then add the flour.
Slowly pour in the vegetable broth and milk mixture, stirring constantly.
Simmer over low-medium heat until the sauce is creamy and thick.
Grease a baking tray with 1 tablespoon vegan butter, place the sliced potatoes in the tray, and pour the creamy sauce over them.
Bake for 1 hour and 10 minutes, or until the potatoes are golden.
Let cool before serving.
Garnish with fresh thyme, salt, and pepper.
