Vegan Potato Bake with Creamy Sauce

Ingredients

  • 1/2 onion
  • 1 clove garlic
  • 2 tablespoons vegan butter
  • 1.5 cups plant-based milk
  • 1 cup vegetable broth
  • 2 tablespoons flour
  • 700g potatoes
  • Salt and pepper
  • Thyme

Preparation

  1. Preheat the oven to 200°C/400°F.

  2. Finely wash and thinly slice the potatoes, and chop the onion and garlic.

  3. Mix the vegetable broth and plant-based milk together.

  4. Add 1 tablespoon vegan butter to a saucepan and sauté the onion and garlic over medium heat, then add the flour.

  5. Slowly pour in the vegetable broth and milk mixture, stirring constantly.

  6. Simmer over low-medium heat until the sauce is creamy and thick.

  7. Grease a baking tray with 1 tablespoon vegan butter, place the sliced potatoes in the tray, and pour the creamy sauce over them.

  8. Bake for 1 hour and 10 minutes, or until the potatoes are golden.

  9. Let cool before serving.

  10. Garnish with fresh thyme, salt, and pepper.
