Vegan Scalloped Potatoes with Garlic and Thyme

Ingredients

  • 1/2 onion
  • 1 clove of garlic
  • 2 tablespoons plant butter
  • 1.5 cups plant milk
  • 1 cup vegetable broth
  • 2 tablespoons flour
  • 700g potatoes
  • Salt and pepper
  • Thyme

Preparation

  1. Preheat the oven to 200°C (390°F).

  2. Wash and finely chop the potatoes into thin slices. Chop the onion and garlic. Prepare the vegetable broth and mix it with the milk.

  3. In a saucepan, add some plant butter, then add the onion and garlic, and cook at medium heat. Add flour while stirring. Slowly add the mixture of vegetable broth and milk, and continue stirring. Simmer at low-medium heat until the sauce is creamy and thick.

  4. Grease the bottom of an oven-baked tray with some butter. Arrange the potato slices in the tray and cover with the sauce. Bake for 70 minutes until golden and colorful. Decorate with fresh thyme, salt, and pepper on top.
