Cranberry & Kale Chicken Meatballs with Cranberry Dipping Sauce

Ingredients

  • 1 lb ground chicken
  • 1/2 cup chopped kale
  • 1/2 onion (grated)
  • 1 egg
  • 2 tbsp coconut flour
  • 1/4 cup dried cranberries
  • 1 tsp Rosemary
  • 1 tsp garlic
  • 1/2 tsp salt

Preparation

  1. In a bowl, whisk the egg.

  2. Add in ground chicken, chopped kale, grated onion, coconut flour, dried cranberries, rosemary, garlic, and salt.

  3. Mix all the ingredients together well.

  4. Form about 15 small meatballs from the mixture.

  5. Heat a skillet over medium heat.

  6. Cook the meatballs in olive oil for 7 minutes on each side or until the internal temperature reaches 165°F.

  7. While the meatballs are cooking, prepare the cranberry dipping sauce.

Cranberry Dipping Sauce

  1. Peel and dice the apple.

  2. Heat a saucepan over medium heat.

  3. Add cranberries, diced apple, maple syrup, and cinnamon to the saucepan.

  4. Cook the mixture for about 10-12 minutes at a simmer, then mash everything with a fork to create a chunky sauce.
