Filipino Adobo with Sticky Rice Cake
Ingredients
Adobo
- 1 kg meat (chicken or pork)
- 1/2 cup sugarcane vinegar
- 1/3 cup soy sauce
- Palmful black pepper
- 1 head of garlic
- 3 bay leaves
Sapin sapin
- Ube (purple yam)
- Jackfruit
- Coconut
- Sticky rice
- Coconut milk
Preparation
Adobo
Marinate chicken or pork in soy sauce, sugarcane vinegar, garlic, black pepper, and bay leaves for a few hours.
Brown the meat in a pan.
Simmer the meat in its marinade until a glossy, garlicky, salty, sour sauce forms.
Sapin sapin
Prepare sticky rice cake flavored and colored by ube, jackfruit, and coconut.
Make latik by simmering coconut milk until it splits into oil and curds, then continue to cook the curds until they caramelize.
Serve the sticky rice cake with latik on top.
