Black Bean and Sweet Potato Chili

Ingredients

  • 1 1/2 jars tomato sauce (low sodium)
  • 2 cups vegetable broth (low sodium)
  • 1 can unsalted organic black beans (bpa free)
  • 1 cup brown rice
  • 1 large sweet potato
  • 1 1/2 red pepper
  • 2 tbsp avocado oil
  • 1/2 cup diced onion
  • 4 garlic cloves

Preparation

  1. Place vegetable broth and tomato sauce with black beans and cooked brown rice on low heat in a medium or large pot.

  2. Place garlic and onion in a medium heated pan with 2 tablespoons of avocado oil and cook until the onion is slightly translucent, then turn off the heat.

  3. Cook sweet potato in another pan with high heat boiling water until tender, about 20-30 minutes.

  4. Once sweet potato is tender, dice it and place with onions and garlic.

  5. Dice the pepper and place with onions and garlic as well.

  6. Turn heat back on low and sauté all the vegetables together for 5-8 minutes, then place in the chili pot.

  7. Turn the chili pot on medium heat and cook for 15 minutes while adding seasonings of choice, such as sriracha, turmeric powder, cayenne pepper, Himalayan salt, and cumin.

  8. In your bowl, top it with tahini and green onions, and enjoy.
