Cheesy Tomato Gnocchi
Ingredients
- 400g gnocchi
- 1 red onion, diced
- 2 tomatoes, chopped
- Sundried tomatoes
- 400ml crushed tomatoes (preferably seasoned)
- Water, as necessary
- 1/2 tbsp basil (approximate measurement)
- 1/2 tbsp oregano (approximate measurement)
- 1/2 tbsp thyme (approximate measurement)
- Salt and black pepper, to taste
- Generous amount of oil
- Shredded cheese
- Bread crumbs
Preparation
Place the gnocchi in a bowl of cold water and let it sit for 10 minutes to allow them to swell.
In a frying pan, add some oil and diced onion. Fry until the onion turns golden brown.
Drain the gnocchi and add them to the frying pan along with the chopped tomatoes. Add more oil and fry until the gnocchi start to develop some color.
Pour in the crushed tomatoes. Add water if necessary. Don't forget to add the basil, oregano, thyme, salt, and black pepper. Let the mixture simmer for 10-15 minutes.
Add some sundried tomatoes, bread crumbs, and grated cheese on top. Cover the pan with a lid until the cheese melts.
Serve, eat, and enjoy!
