Classic Chicken Maftool Dish
Ingredients
- 2 kg chopped chicken
- 6 large onions, quartered
- 2 tablespoons olive oil
- 2 tablespoons salt
- 3 cups water
- 1 teaspoon black pepper
- 2 tablespoons saffron threads
- 1 teaspoon caraway
Maftool components
- 2 kg maftool
- 1 large onion, chopped
- 1 tablespoon caraway
- 1 teaspoon cumin
- 1 cup cooked chickpeas
- 1/4 cup olive oil
Preparation
In a large pot, heat olive oil and sauté quartered onions until golden brown
Add chopped chicken and brown on all sides
Stir in salt, black pepper, saffron threads, and caraway, then add water and bring to a boil
Reduce heat and simmer until chicken is fully cooked and tender
In a separate pot, heat olive oil and sauté chopped onion until soft
Add caraway, cumin, and cooked chickpeas to the onion mixture and stir well
Mix in the maftool grains and add some broth from the chicken pot if needed
Cover and steam or simmer the maftool mixture until grains are tender and fluffy
Combine the cooked chicken and maftool on a serving platter and mix gently before serving
