Cozy Vegan Lentil and Noodle Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, finely chopped
  • 2 large carrots (yellow and orange), chopped
  • 1 cup frozen spinach, chopped
  • 2 cups prepared black lentils
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon red chili flakes
  • 1 teaspoon basil
  • 1/2 cup nutritional yeast
  • Millet and brown rice ramen
  • Pad Thai rice noodles
  • 8 cups vegetable broth

Preparation

  1. Add olive oil to a large Dutch oven, sauté onions until just about translucent.

  2. Add garlic and give a nice stir allowing to cook for 1 minute.

  3. Add carrots, spinach, salt, pepper, chili flakes and basil. Stir and allow to cook for 2-3 minutes.

  4. Add the vegetable broth and nutritional yeast. Allow to simmer until heated throughout.

  5. Five minutes before you’re ready to eat, add millet and brown rice ramen and black pad Thai noodles.
