Vegan Chicken-Less and Rice Soup

Ingredients

  • 2 quarts of vegetable broth
  • 2 stalks of celery, chopped
  • 1 large carrot, chopped
  • 1 small onion, finely diced
  • 1-14.5oz petite diced tomatoes
  • 3 tbsp nutritional yeast
  • 2 tsp trader joe’s chicken-less seasoning
  • 1/2 tsp pepper

Preparation

  1. In a large soup pot, heat avocado oil over medium-high heat

  2. Add onion, carrots and celery

  3. Stir for 3-4 minutes

  4. Add broth, diced tomatoes, nutritional yeast, TJ chicken-less seasoning, and pepper

  5. Stir and bring to a boil

  6. Reduce heat and cover

  7. Cook for 30 minutes, or until vegetables are tender

  8. Cook rice according to package

  9. Fill the bottom of each soup bowl with rice and ladle soup over top
