Vegan White Bean Soup
Ingredients
- 2 tbsp olive oil
- 1 onion
- 2 garlic cloves
- 1 tsp thyme
- 1 tsp rosemary
- 1 potato
- 1 carrot
- 3 cups of broth
- Salt & pepper to taste
- 1 can of cooked beans
- 1 cup of kale leaves
- 1 tsp white pepper
- 1 tsp garlic powder
Preparation
Sauté chopped onion, garlic and thyme and rosemary in olive oil
Add potato, carrot, and 2 out of 3 cups of the broth. Season with salt and pepper and cook covered for 10 minutes.
Add the rinsed beans, cook for another 5 minutes, and blend two-thirds of the soup and mix it back in.
Add the remaining cup of broth, season with garlic powder and white pepper, and cook for another 5 minutes.
