Vegan White Bean Soup

Ingredients

  • 2 tbsp olive oil
  • 1 onion
  • 2 garlic cloves
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 potato
  • 1 carrot
  • 3 cups of broth
  • Salt & pepper to taste
  • 1 can of cooked beans
  • 1 cup of kale leaves
  • 1 tsp white pepper
  • 1 tsp garlic powder

Preparation

  1. Sauté chopped onion, garlic and thyme and rosemary in olive oil

  2. Add potato, carrot, and 2 out of 3 cups of the broth. Season with salt and pepper and cook covered for 10 minutes.

  3. Add the rinsed beans, cook for another 5 minutes, and blend two-thirds of the soup and mix it back in.

  4. Add the remaining cup of broth, season with garlic powder and white pepper, and cook for another 5 minutes.
