Lentil Soup with Ginger and Vegetables
Ingredients
- 1/2 onion, chopped
- 1 tablespoon olive oil
- 1 cube vegetable soup stock
- 1 liter water
- 1/2 cup red lentils
- 3 carrots, chopped
- 1 garlic clove, crushed
- fresh ginger, grated (thumb size)
- 1 teaspoon black pepper
- 1 teaspoon turmeric powder
- 1 cup kale leaves, chopped
- 1/2 lime
Preparation
Cook the chopped onion briefly in olive oil.
Add vegetable soup stock cube, water, red lentils, chopped carrots, crushed garlic, grated ginger, black pepper, and turmeric powder.
Cook everything for 15 minutes.
Add chopped kale leaves.
Cook for 2-4 more minutes until the lentils are soft.
Serve with freshly squeezed lime juice.
