Spiced Lentil and Vegetable Soup

Ingredients

  • 1 tbsp olive oil
  • 1/2 medium onion finely chopped
  • 4 cloves garlic
  • 1/2 red chilli chopped & deseeded
  • 1 heaped tsp ground coriander
  • 1 heaped tsp paprika
  • 2 medium carrots diced
  • 1 red pepper diced
  • 2 cups red lentils
  • 1 tbsp tomato purée
  • 1.5 litres vegetable stock

Preparation

  1. Sauté the onions in the olive oil on a medium high heat for a few minutes before adding the diced carrots, peppers, chilli and garlic and sauté for another five minutes.

  2. Add the dry spices and stir for a minute, then add the lentils and tomato purée. Mix well, then add the stock.

  3. Bring up to a simmer. Then cover and simmer on low for 20 minutes.

  4. Stir and check the consistency, add more stock if too thick then season with salt and pepper.
