Spiced Lentil and Vegetable Soup
Ingredients
- 1 tbsp olive oil
- 1/2 medium onion finely chopped
- 4 cloves garlic
- 1/2 red chilli chopped & deseeded
- 1 heaped tsp ground coriander
- 1 heaped tsp paprika
- 2 medium carrots diced
- 1 red pepper diced
- 2 cups red lentils
- 1 tbsp tomato purée
- 1.5 litres vegetable stock
Preparation
Sauté the onions in the olive oil on a medium high heat for a few minutes before adding the diced carrots, peppers, chilli and garlic and sauté for another five minutes.
Add the dry spices and stir for a minute, then add the lentils and tomato purée. Mix well, then add the stock.
Bring up to a simmer. Then cover and simmer on low for 20 minutes.
Stir and check the consistency, add more stock if too thick then season with salt and pepper.
