Detox Lentil Vegetable Soup
Ingredients
- 1 tsp olive oil
- 3-4 garlic cloves, minced
- 1/2 medium white onion, chopped
- 3 medium carrots, chopped
- 1 red bell pepper, sliced
- 1 large parsnip, chopped
- 1 small zucchini, chopped
- 1 cup broccoli florets
- 1 large handful of kale
- 1/2 cup frozen green beans
- 3/4 cup quinoa
- 1 carton lentil vegetable soup
- 2 tbsp tomato paste
- 2 cartons vegetable stock
Spices
- 1/2 tsp oregano
- 1 tsp basil
- 1/2 tsp thyme
- 1 tsp garlic powder
- 1/2 tsp paprika
- pinch of red chilli flakes
- salt and pepper to taste
Preparation
In large soup pot, heat olive oil and saute carrots, garlic, and onions on medium. Add all spices and cook until onions are translucent.
Add broth, lentil vegetable soup, quinoa, and tomato paste and stir. Add parsnips, bell pepper, and zucchini and bring to a boil.
Once it boils, reduce heat to medium low and cook for 30 minutes. Then add broccoli, kale, and green beans and cook for another 10 minutes. Top with fresh herbs and enjoy.
