Curried Sweet Potato Red Lentil Soup

Ingredients

  • 2 tbsp olive oil
  • 1/2 red onion diced
  • 1 large clove garlic minced
  • 2 carrots chopped
  • 2 stalk celery chopped
  • 1 heaping tbsp curry spice
  • 1 tsp turmeric
  • 1/4 tsp cayenne
  • 1/2 tsp chilli flakes
  • 1/2 tsp salt
  • 1 large sweet potato cut into cubes
  • 1 28 ounce can of crushed tomatoes
  • 1 cup red lentils rinsed
  • 1 can of chickpeas rinsed
  • Handful baby spinach
  • 3 cups kale
  • 3 cans of water
  • 1 tsp salt
  • Cracked black pepper
  • Grated Violife Foods Parmesan cheese

Preparation

  1. Heat olive oil, sweat onion, add garlic and spices and sauté.

  2. Add splash of water to keep things moving.

  3. Add carrot and celery and sauté for a few minutes.

  4. Add sweet potato and sauté for 3-4 minutes.

  5. Add can of tomatoes and water, bring to a boil, reduce heat to medium.

  6. Allow to cook for several minutes before adding in red lentils and chickpeas.

  7. Cook 15 minutes more before adding spinach and kale.

  8. Check for seasoning.

  9. Grate cheese into soup.
