Quick Lentil Chilli

Ingredients

  • 1 carrot⁠
  • 1 stick of celery⁠
  • 1 white onion⁠
  • 2 cloves of garlic⁠
  • 1 tsp cumin⁠
  • 1/2 tsp paprika⁠
  • 1/2 tsp cinnamon⁠
  • 1 heaped tbsp tomato purée⁠
  • 1 tsp soy sauce⁠
  • 2 tins of brown lentils⁠
  • 2 tins of kidney beans in chilli sauce⁠
  • 1 tin of good tomatoes⁠
  • salt and pepper⁠
  • a handful of chopped coriander⁠
  • quinoa⁠

Preparation

  1. Heat some oil in a pan

  2. Add the carrot, celery, and onion and fry until softened

  3. Add the garlic and continue cooking

  4. Add the spices to the pan, stir and cook for another minute

  5. Add the tomato purée, stir and add the soy sauce

  6. Stir well to coat everything before adding the lentils, kidney beans with their sauce and the tomatoes

  7. Simmer on a medium heat to reduce, stirring intermittently to stop it sticking to the bottom

  8. You could transfer to a slow cooker if you prefer

  9. When it's ready add a handful of chopped coriander and serve with the fluffy quinoa and a fancy avocado rose if you have time on your hands! enjoy!⁠
