Sweet Potato and Lentil Chili

Ingredients

  • 1 cup red lentils
  • 1 medium sweet potato
  • 1 cup vegetable stock
  • 1/2 can black beans
  • 1/2 can sweet corn
  • 150 ml tomato sauce or crushed tomatoes
  • 1/2 paprika
  • 1/2 package vegan soy meat or seitan (150 g)
  • Taco spice mix (e.g., paprika, chili, garlic)

Preparation

  1. Begin by peeling and chopping the sweet potato into small cubes.

  2. Boil the sweet potato in a little water and vegetable stock.

  3. After approximately 5-10 minutes, add the red lentils and allow to boil for approximately 10 minutes, making sure to stir to prevent sticking.

  4. Add the tomato sauce to reach the desired consistency.

  5. Add the taco spice mix along with the black beans, sweet corn, and pepper pieces, then mix in with the lentils and potatoes.

  6. Add the soy meat last.

  7. Allow to boil on medium heat for approximately 2-3 more minutes until everything is cooked.

Notes

  1. You can boil quinoa, rice, or broccoli at the same time.

  2. If making homemade nacho chips, do this 5 minutes before serving.

  3. Can be eaten both warm and cold, and it lasts several days in the fridge or can be frozen if made in a large batch.
