Baked Rice and Beans

Ingredients

  • 1 cup uncooked brown rice
  • 1 can black beans, rinsed and drained
  • 1/2 cup tomato sauce
  • 2 cups vegetable broth
  • 1/2 green bell pepper, diced
  • 1/2 red bell pepper, diced
  • 1/2 tsp cumin
  • 1 tsp sazón
  • 1/4 tsp adobo
  • 1/4 tsp black pepper
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeño, diced
  • bunch of cilantro with the ends, roughly diced
  • salt to taste

Preparation

  1. Preheat oven to 400F

  2. In a sauce pan sauté garlic, add in tomato sauce, veggie broth and all seasonings

  3. Bring to a boil then remove from heat

  4. In a baking dish add black beans and spread over bottom of dish

  5. Layer on peppers, onions and cilantro

  6. Cover with rice and then pour broth mixture overtop

  7. Cover with foil and then place in oven

  8. Bake for at least 55 minutes then remove from oven

  9. Stir with spoon and the

  10. Serve as desired
