Sweet Potato and Lentil Chili
Ingredients
- 1 medium sweet potato
- 1c vegetable stock
- 1c red lentils
- 1/2c corn
- 1/2t paprika
- 1/2 package vegan soy meat/seitan
- 1t taco spice mix (example paprika. chili. garlic)
- optional: garlic and onion
Preparation
Begin by peeling and chopping the sweet potato into small cubes
Boil the sweet potato in a little water (enough to cover the sweet potato) and vegetable stock
After c.a. 5-10 minutes add the red lentils and allow to boil for c.a. 10 min
Make sure to stir so that the red lentils don't stick to the pot)
Add the tomato sauce - add as much as you like to reach desired consistency
Add the taco spice mix along with the black beans
Sweet corn and pepper pieces
Mix in with the lentils and potatoes
Add lastly add the soy meat
Allow to boil on medium heat c.a. 2-3 more minutes until everything is cooked
Note: You can boil quinoa/rice/broccoli during the same time
And if making home made nacho chips
You can do this 5 minutes before serving
Can be eaten both warm and cold
And lasts several days in the fridge or can be frozen if you make a large batch
