Sweet Potato and Lentil Chili

Ingredients

  • 1 medium sweet potato
  • 1c vegetable stock
  • 1c red lentils
  • 1/2c corn
  • 1/2t paprika
  • 1/2 package vegan soy meat/seitan
  • 1t taco spice mix (example paprika. chili. garlic)
  • optional: garlic and onion

Preparation

  1. Begin by peeling and chopping the sweet potato into small cubes

  2. Boil the sweet potato in a little water (enough to cover the sweet potato) and vegetable stock

  3. After c.a. 5-10 minutes add the red lentils and allow to boil for c.a. 10 min

  4. Make sure to stir so that the red lentils don't stick to the pot)

  5. Add the tomato sauce - add as much as you like to reach desired consistency

  6. Add the taco spice mix along with the black beans

  7. Sweet corn and pepper pieces

  8. Mix in with the lentils and potatoes

  9. Add lastly add the soy meat

  10. Allow to boil on medium heat c.a. 2-3 more minutes until everything is cooked

  11. Note: You can boil quinoa/rice/broccoli during the same time

  12. And if making home made nacho chips

  13. You can do this 5 minutes before serving

  14. Can be eaten both warm and cold

  15. And lasts several days in the fridge or can be frozen if you make a large batch
