Hearty Lentil Soup with Vegetables and Herbs

Ingredients

  • 1 cup Green Lentils
  • 1/3 cup Red Lentils
  • 1 small Onion
  • 3 cloves of Garlic
  • 3 med Carrots
  • 3 stalks of Celery
  • 1 Golden Potato
  • 1 tsp of Better Than Bouillon no beef base
  • 2 tsp of Thyme
  • 1/2 cup fresh Parsley
  • 6 cups of water
  • Salt & Pepper to taste

Preparation

  1. Sauté the Onion, Celery and Carrot until the Onions become translucent.

  2. Add in the Veggie Bouillon, Potato, Garlic, Thyme, Salt, Pepper and Lentils. Continue cooking for a few minutes, making sure to mix well.

  3. Add in the water, cover the pot and let simmer on med-low heat for 30 minutes or until the Lentils are completely tender.

  4. Check for seasoning and add in the chopped Parsley. Mix well and serve.

Tips

  1. It's a great source of plant protein and makes awesome leftovers.

  2. You can create an entire new dish by pouring it over rice, pasta or even a sweet potato.
