Spicy Chipotle Lentil Bowl with Avocado Garnish
Ingredients
- 1 onion finely chopped
- 2 cloves garlic, minced
- 1 T. olive oil
- 1 T. cumin
- 1 T. chilli powder
- 1/4 c. tomato paste
- 1 T. chipotle paste (I love Olo Chipotle Paste @olofoods)
- 1 1/2 c. red lentils, rinsed
- 2 c. water (additional 2 c. on reserve)
Preparation
In a large skillet with deep sides or saucepan, add 1 T. olive oil to onions and cook at a low heat until soft and translucent - about 5 minutes.
Add garlic and cook for an additional minute.
Add cumin and chilli powder and allow to cook while stirring until fragrant - about 1 minute.
Add tomato paste and chipotle paste, lentils and 2 c. of water.
Simmer at a low heat for about 25 minutes or until the liquid has cooked off and the lentils are soft.
Red lentils will take on a mushy texture; monitor carefully and add up to 2 additional cups of water during cooking if needed until lentils are soft.
When they reach the right consistency, smash them with a potato masher.
Serve with sliced avocado, leafy greens, herbs of your choice, and optional additions like hot sauce, vegan cheese, and toasted pepitas.
