Chickpea Tacos with Homemade Corn Wraps

Ingredients

  • 1 onion
  • 2 cloves of garlic
  • 1 can if chickpeas, drained
  • 2 tbsp of tomato paste
  • 2 tbsp of mustard
  • mexican spice mix
  • corn tacos:
  • 1/2 cup of corn flour
  • 1 1/2 cup of water
  • a pinch of salt
  • 1/2 cup of corn flour
  • •1 1/2 cup of water
  • •a pinch of salt

Preparation

  1. Chop up the onion and garlic and sauté in water

  2. Add the tomato paste and mustard and stir until everything is combined

  3. Add water if the sauce is too thick

  4. Add the spice mix and the chickpeas

  5. Stir and let everything heat up

  6. Season with salt, pepper and lemon juice

  7. Mix all the ingredients together until you get a dough, that is easy kneadable and doesn't stick too much

  8. Separate the dough into 5 parts

  9. I placed these between two sheets of parchment paper, so they wouldn't stick to the counter and flattened them with a rolling pin

  10. Heat up a non stick pan and bake the dough on both sides

  11. These wraps won't brown too much so keep checking for small discolorations
