Leftover Turkey Vegetable Soup

Ingredients

  • 1 small onion
  • 2 carrots
  • 2 medium potatoes
  • 1 cup broth
  • 1 cup water
  • 2 celery stalks
  • 2 garlic cloves
  • salt
  • pepper
  • thyme
  • rosemary
  • diced leftover turkey

Preparation

  1. Sauté 1 small diced onion and 2 carrots.

  2. Boil 2 medium diced potatoes in 1 cup broth and 1 cup water until soft.

  3. Blend the potatoes with an immersion blender until creamy.

  4. Add 2 diced celery stalks and 2 minced garlic cloves to the pot with the onion mixture and cook for a few more minutes.

  5. Add 2 cups broth, salt, pepper, thyme, rosemary, and stir in the puréed potatoes.

  6. Add diced leftover turkey and simmer for 10 minutes.

  7. Add more broth as needed and enjoy.
