Hearty Chunky Lentil Vegetable Soup

Ingredients

  • 2 cups brown lentils
  • 2 potatoes
  • 2 carrots
  • 1 zucchini
  • 1 red capsicum
  • 1 celery stalk
  • 1 onion
  • 1 garlic clove
  • half a head of broccoli
  • 1 cup passata
  • 1 cup veg stock
  • 1 cup water
  • 1 tablespoon pepper paste
  • 1 tsp herbamare
  • 1 tsp oregano
  • 1 tsp basil
  • Salt & pepper to taste

Preparation

  1. Chop all vegetables into bite-sized pieces

  2. In a large pot, sauté onion and garlic in a little oil over medium heat until softened and fragrant

  3. Add brown lentils, chopped vegetables, passata, veg stock, water, pepper paste, herbamare, oregano, basil, salt, and pepper to the pot

  4. Bring the mixture to a boil, then reduce heat and simmer for 30-45 minutes until lentils and vegetables are tender
