Classic T U R K E Y Noodle Soup
Ingredients
- 1 cup diced onion
- 1-2 cups diced celery
- 1-2 cups diced carrots
- 3 garlic cloves minced
- 1 tbsp diced ginger
- 3/4 cup small noodles {i like ditali}
- 6 cups broth
- 1 cup water {or more depending how you like it}
- 2 cups cooked diced chicken or turkey
- 1/2 tsp thyme & chili flakes
- salt & pepper
- 1/2 lemon
- Parsley {optional for garnish}
Preparation
Cook onions, carrots, celery for 5 mins in olive oil in a large pot
Add garlic & ginger, cook another 2 mins
Add spices, cook for 30 seconds
Add broth & water; boil for 10 mins
Add turkey & noodles; simmer for 12 mins
Season as needed, top with parsley & a squeeze of lemon juice
