Classic T U R K E Y Noodle Soup

Ingredients

  • 1 cup diced onion
  • 1-2 cups diced celery
  • 1-2 cups diced carrots
  • 3 garlic cloves minced
  • 1 tbsp diced ginger
  • 3/4 cup small noodles {i like ditali}
  • 6 cups broth
  • 1 cup water {or more depending how you like it}
  • 2 cups cooked diced chicken or turkey
  • 1/2 tsp thyme & chili flakes
  • salt & pepper
  • 1/2 lemon
  • Parsley {optional for garnish}

Preparation

  1. Cook onions, carrots, celery for 5 mins in olive oil in a large pot

  2. Add garlic & ginger, cook another 2 mins

  3. Add spices, cook for 30 seconds

  4. Add broth & water; boil for 10 mins

  5. Add turkey & noodles; simmer for 12 mins

  6. Season as needed, top with parsley & a squeeze of lemon juice
