Simple Carrot Soup for Two
Ingredients
- 3 carrots
- 1 small onion
- 3 garlic cloves
- 1 inch ginger
- 1 jalapeño (optional)
- oil
- broth (2-3 cups)
- salt
- almond milk or milk alternative (1/2 cup)
- pepper
- chili flakes
Preparation
Chop the vegetables: 3 carrots, 1 small onion, 3 garlic cloves, 1 inch ginger, and 1 optional jalapeño.
Sauté onions and carrots with a sprinkle of salt in oil until soft, about 6 minutes.
Add garlic, ginger, and jalapeño, and cook for another 3 minutes.
Add broth to cover the vegetables (about 2-3 cups), bring to a boil, and then simmer for 20 minutes.
Blend the soup until smooth.
Stir in 1/2 cup of almond milk, regular milk, or cashew cream.
Season with salt, pepper, and chili flakes to taste.
