Simple Carrot Soup for Two

Ingredients

  • 3 carrots
  • 1 small onion
  • 3 garlic cloves
  • 1 inch ginger
  • 1 jalapeño (optional)
  • oil
  • broth (2-3 cups)
  • salt
  • almond milk or milk alternative (1/2 cup)
  • pepper
  • chili flakes

Preparation

  1. Chop the vegetables: 3 carrots, 1 small onion, 3 garlic cloves, 1 inch ginger, and 1 optional jalapeño.

  2. Sauté onions and carrots with a sprinkle of salt in oil until soft, about 6 minutes.

  3. Add garlic, ginger, and jalapeño, and cook for another 3 minutes.

  4. Add broth to cover the vegetables (about 2-3 cups), bring to a boil, and then simmer for 20 minutes.

  5. Blend the soup until smooth.

  6. Stir in 1/2 cup of almond milk, regular milk, or cashew cream.

  7. Season with salt, pepper, and chili flakes to taste.
