carrot ginger soup
Ingredients
- 400ml vegetable stock
- salt and pepper
- olive oil
- 1/2bunch cilantro
- 1/2tb sugar
- handfull pumkin seeds
- 50ml coconut milk
- nutmeg
- 15 Carrots
- 1 Thumb big piece of ginger
- 1 onion
- 1 orange
- 1pack Soup vegetables (500g)
Preparation
Chop onion and ginger
Roast the onions in a pot with oil
Peel and cut the carrots
Add to the pot
Chop the soup vegetables and add to the pot
Mix 1,5 litres of water with the vegetable stock and add it to the pot
Cook until the vegetables are soft
Puree the soup, leave little bits if you want or puree it completely smooth
Add the juice of the orange
Add the coconut milk
Spice it with nutmeg, sugar salt and pepper
Cut the cilantro
Serve woup with cilantro and pumkin seeds on top
