carrot ginger soup

Ingredients

  • 400ml vegetable stock⁣
  • salt and pepper⁣
  • olive oil⁣
  • 1/2bunch cilantro⁣
  • 1/2tb sugar⁣
  • handfull pumkin seeds⁣
  • 50ml coconut milk⁣
  • nutmeg⁣
  • 15 Carrots⁣
  • 1 Thumb big piece of ginger⁣
  • 1 onion⁣
  • 1 orange⁣
  • 1pack Soup vegetables (500g)⁣

Preparation

  1. Chop onion and ginger⁣

  2. Roast the onions in a pot with oil⁣

  3. Peel and cut the carrots⁣

  4. Add to the pot⁣

  5. Chop the soup vegetables and add to the pot⁣

  6. Mix 1,5 litres of water with the vegetable stock and add it to the pot⁣

  7. Cook until the vegetables are soft ⁣

  8. Puree the soup, leave little bits if you want or puree it completely smooth⁣

  9. Add the juice of the orange⁣

  10. Add the coconut milk⁣

  11. Spice it with nutmeg, sugar salt and pepper⁣

  12. Cut the cilantro⁣

  13. Serve woup with cilantro and pumkin seeds on top⁣
