Paprika Sweet Potato Soup

Ingredients

  • 400g sweet potato, diced
  • 250ml vegetable stock
  • 125ml coconut milk
  • 1 tsp paprika powder
  • 1/2 tsp onion powder
  • Salt and pepper

Preparation

  1. In a medium saucepan, stir sweet potato dices and vegetable stock.

  2. Cook over medium heat for 25-35 minutes.

  3. Blend the mixture with coconut milk and seasoning.

  4. Return soup to pan.

  5. Thin out with more water or milk if desired.
