Paprika Sweet Potato Soup
Ingredients
- 400g sweet potato, diced
- 250ml vegetable stock
- 125ml coconut milk
- 1 tsp paprika powder
- 1/2 tsp onion powder
- Salt and pepper
Preparation
In a medium saucepan, stir sweet potato dices and vegetable stock.
Cook over medium heat for 25-35 minutes.
Blend the mixture with coconut milk and seasoning.
Return soup to pan.
Thin out with more water or milk if desired.
