Vegan Celery- Asparagus Cream Soup
Ingredients
- 2 potatoes -peeled & cubed
- 1 celery -sliced
- 8cm leek chopped
- Salt, pepper
- 1 tsp bayleafs powder
- 1tbsp olive oil
- 1tbsp vegetable ghee
- 250 g green asparagus chopped
- 700 ml good quality vegetable stock
- 4 tbsp rice cuisine/4tbsp coconut milk
Preparation
In a large pot on a low heat melt ghee and oil , add celery , leek , potatoes and asparagus & sweat for 2 min stirring occasionally
Add the vegetable stock and seasoning, bring to boil and cook everything on lower heat for 10min- until the potatoes are soft boiled
Add the rice cuisine or coconut milk and blend the soup
Serve with your favourite soup toppings
